Mediterranean Za’atar Salad

A marriage of Lebanon’s most beloved flavors, this salad shines with the earthy aroma of Za’atar and the depth of extra virgin olive oil. Crisp lettuce, cucumber, and tomatoes set a fresh foundation, while creamy feta and briny Kalamata olives add richness. Golden Za’atar pita chips bring a warm, toasty crunch, and a lemon-oregano dressing ties it all together. Bright, rustic, and a healthy meal full of joy.

Salad

  • 1 Head Romaine
  • 1 Cup Cherry Tomatoes
  • 1 Cucumber
  • ½ Cup Kalamata Olives
  • ½ Cup Crumbled Feta
  • 2 pieces of Pita Bread
  • Chicken or Salmon (optional)

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • ½ tsp dried oregano

INSTRUCTIONS

Za’atar Pita Chips

  • Preheat oven to 375°F (190°C).
  • Slice pita bread into triangles or strips.
  • Toss with 2 tbsp olive oil and 2 tsp za’atar seasoning.
  • Spread on a baking sheet and bake for 8–10 minutes until crisp and golden.
  • Set aside to cool.

Salad Base

  • Drain, pit and halve the olives
  • halve tomatoes or cut into 1/4” pieces if using large tomatoes
  • Trim and slice cucumber into half-moons.
  • Shred lettuce

Plating

  • In a large bowl, combine lettuce, tomatoes, cucumber, olives, and feta.
  • Whisk together the dressing ingredients and drizzle over the salad. Toss gently.
  • Top with za’atar pita chips just before serving.
  • (Optional) Add sliced grilled chicken or salmon on top for extra protein.
